Hawaiian Coconut Butter Mochi

Be sure to make mochi for a friend too! Double this recipe for two beautiful pans of delicious buttery coconut mochi.

Living on the island of Maui for a couple of years, I had the experience of sampling new foods. Maui is a conglomeration of Hawaiian, Japanese, Chinese, Phillipino, Asian, and even American food. There wasn't a lot of Texas style barbecue, but there were many foods that I enjoyed just as much.

I found Mochi at the farmer's market in Kahalui one day. It is sold in wax paper wrappers and cut in strips. One taste and I was hooked! This is a creamy, yet solid, coconut pudding with a great buttery flavor. It is very soothing to eat. It's also very addicting and hard to get enough of. The whole recipe will be gobbled up in no time!

While cooking, this recipe smells like the best custard in the world. It will also make your house smell great. It's hard to wait the one hour cooling time before you can cut and eat the mochi, but wait you must. Then enjoy...

Hawaiian Coconut Butter Mochi - Instructions:

  1. Melt a stick of butter in a bowl (1/2 cup). 30 seconds in the microwave.
  2. Mix in 1 cup of sugar.
  3. Add 3 eggs, one at a time and mix.
  4. Add 1 can of coconut milk + enough milk (or more coconut milk) to make a total of 3 cups of liquid. (one can of coconut milk is about 1.5 cups)
  5. Add 1 teaspoon of vanilla.
  6. In another bowl, mix together the dry ingredients: 2 cups of glutinous rice or mochiko flour, 1 t. baking powder, and a pinch of salt
  7. Add the mochi flour mixture to the liquid ingredients and mix thoroughly with a whisk.
  8. Add a cup of flaked coconut (sweetened or unsweetened), if desired.
  9. Pour the mixture into a 13 X 9 X 2 greased or oil sprayed pan and bake at 350 degrees for 45 - 60 minutes. I like leaving it in for the full hour.
  10. Allow the mochi to cool for an hour, cover and store in the refrigerator.
  11. You can cut the mochi into strips, squares, or use a cookie cutter.

Keep it cool. If it is too sticky to work with you can dust it with the mochi (mochiko) flour. Coconut mochi makes a nice new addition to the office pot luck celebrations. It's easy to make, prep time is only about 20 minutes. Baking it will make your whole house smell good. The finished and cooled mochi can be turned out on to a dusted surface and top dusted with mochico flour. The firm pudding can be cut into shapes or cut out with cookie cutters. Store it in the refrigerator in a wax paper lined and dusted cookie tin for portability.

There is a nice farmer's market and flea market in Kahalui, Maui where you can buy mochi and other great Hawaiian stuff! Ask any local for directions. It is usually open on the weekends. But you don't have to go to Maui to enjoy this great coconut pudding dessert at home! This recipe is easy and quick. Give it a try!
